Cottage Cheese Mashed Potatoes

Ingredients

  • 500 g Potatoes
  • 200 g Cottage Cheese
  • 2 tablespoon Olive Oil
  • 2 tablespoon Chopped Chives
  • Salt To Taste

Instructions

  • Peel and chop the potatoes into even pieces.
  • Add them to a large pot of salted cold water and bring to a boil.
  • Cook the potatoes until fork tender, then drain them well. This will take approximately 20 minutes.
  • Mash potatoes to your desired consistency. A vegetable mill or potato ricer offer smooth results, however, if you like to have chunks of potatoes, you can use a potato masher or a fork instead.
  • Add the cottage cheese and a pinch of salt to a blender or food processor. Blend until smooth. Depending on the consistency of the cheese, you may need to add a couple of tablespoons of water. The blending may take 2-4 minutes.
  • Wash and thinly chop the fresh chives.
  • Add the olive oil, chives, and pureed cottage cheese to the mashed potatoes and mix well. Avoid over-mixing, which can make the potatoes gluey.
  • Taste the seasoning, and add more salt if required. Should you wish, a little black pepper can be used too.
  • Serve hot as a side dish to your favorite proteins and vegetables!

Notes

  • Storage and Reheating: To store cottage cheese mashed potatoes, keep them in an airtight container in the refrigerator for up to 3 days. For freezing, place them in a freezer-safe bag or container for up to 2 months. When reheating, thaw in the fridge if frozen, then warm on the stove or in the microwave, adding a splash of milk or broth to restore creaminess, stirring occasionally to ensure even heating.
  • Cottage Cheese: For cottage cheese mashed potatoes, opt for full-fat cottage cheese for its rich creaminess and subtle tang. The fat content enhances flavor and texture, blending smoothly regardless of curd size.
