Peel and chop the potatoes into even pieces.
Add them to a large pot of salted cold water and bring to a boil.
Cook the potatoes until fork tender, then drain them well. This will take approximately 20 minutes.
Mash potatoes to your desired consistency. A vegetable mill or potato ricer offer smooth results, however, if you like to have chunks of potatoes, you can use a potato masher or a fork instead.
Add the cottage cheese and a pinch of salt to a blender or food processor. Blend until smooth. Depending on the consistency of the cheese, you may need to add a couple of tablespoons of water. The blending may take 2-4 minutes.
Wash and thinly chop the fresh chives.
Add the olive oil, chives, and pureed cottage cheese to the mashed potatoes and mix well. Avoid over-mixing, which can make the potatoes gluey.
Taste the seasoning, and add more salt if required. Should you wish, a little black pepper can be used too.
Serve hot as a side dish to your favorite proteins and vegetables!
